The piece on the left shows what color the Madero Beach really is... sort of a 'sandy' off-white/cream color. To get that paper color showing through in the other images, for all the areas that I want to be that shade, I made white. Most digital printers CANNOT print white. White is the ABSENCE of color. The paper color is what shows through when there is no ink/toner.
In digital printing, white = paper color.
